SEI has owned five high volume, full-service restaurants with total sales volume of over $12 million. These prestigious and popular restaurants included the exciting My Martini and Sforza Ristorante on Clematis Street in downtown West Palm Beach which were wisely sold in 2001 due to the insurgence of the prominent City Place Shopping Mall within our competitive marketing area. Presently, SEI owns and operates the reputable Max's Ocean Front Grille at Beach Place on AIA in Ft. Lauderdale, Max's Bar & Grille at the Riverfront Shopping Center on Las Olas in Ft. Lauderdale, Max's Grille in Weston, Max's Café at Sawgrass and Max's at Vegas. Total revenue in 2005 was over $14 million. All restaurants are profitable and exceed the industry average.

Sailfish Marina, Restaurant & Resort

This magnificent newly constructed restaurant that reopened for revitalized business in January 2000. I was involved from day one (July 1999) in the planning and restructuring of this Palm Beach County landmark and I had complete responsibility for the staff hiring and organization of this exceptionally popular on-the-water restaurant complex. The owners had the initial intentions of contracting the ownership of the revitalized restaurant business to notable restaurant companies. After personally reviewing the proposals of numerous companies, I convinced the owners that it would be substantially more profitable to operate the restaurants ourselves. And most importantly, we would have "control". The Sailfish Marina Restaurant business was then structured, proficiently organized and opened for business under my personal direction. We had initially projected annual sales revenue in the $3,500,000 range. For the year 2000, the food and beverage revenue was $4,800,000, for year 2001 it was $6,000,000 and for years 2002-2003 revenues were close to $7,000,000. Presently, the Sailfish Marina Restaurant is one of the most successful and reputable waterfront restaurants in Palm Beach County.

RON JON is a well-known and thriving retail surf shop business (5-stores). Additionally, they recently branded with a resort business in Orlando and Ormand Beach, Florida. An investment group from West Palm Beach was interested in expanding the RON JON name into restaurants with an equally successful business alliance. Rybovich-Spencer Marina Restaurant Project
West Palm Beach, Fl.

Rybovich-Spencer is a renowned boating, sportfishing, yachting, sailing and megayacht 22-acre marina complex located in West Palm Beach, Florida. I wrote the Business Plan for the owners so that they could judiciously decide if it was prudent to develop a magnificent restaurant complex on their property (similar to the Sailfish only with banquet facilities). This extraordinary Marina Restaurant Project would have included two restaurants and a lounge located on the first floor (seating capacity 259 with sales projections of over $5,000,000) and a second floor 300-seat Oceanic banquet facility with sales projections of over $2,000,000.

Developed a Business Plan for Chef/Owner Rich Hallman, a nationally acclaimed chef who specializes in Native American Cuisine of the Modern Southwest. His food is rooted in American History and has been shaped by a variety of influences including Native American, Spanish, Mexican, Cajun and Creole. Rick had planned to open a first-class restaurant in the thriving community of Jupiter, Florida and he required a professional business plan in order to attract prospective investors.

Completely reorganized the business and financial operations of this popular waterfront restaurant. Increased sales revenue from $1.4 to $1.8 million, reduced operating costs substantially, and earned positive bottom-line income for the first time. Also earned Restaurant of the Year for Palm Beach County, National Restaurant Association.
